I know (obviously) that the 32 one holds alot more files (ie..music, videos etc etc..), but does it speed up the applications that you run on the phone daily? Thanks.

The MicroSD Card only increases the amount of data you can hold. It won't change the speed of the apps loading or operation. That (speed) comes from the processor in the phone.
